The difficulty cannot be changed mid-game, and can only be set before the match starts. Players do have the option of aborting a game however, if they find the difficulty to be too hard. 

Is the two player offline mode the same as classic chess?

The two player offline more is identical to classic chess, where players would take alternate turns using the same device. 

Can I customize friend matches?

Yes. You can customize friend matches, by playing with the different settings available including changing the time constraints, choosing a standard or from position variant, depending upon the player’s choice.
